Our eager acceptance of new (to us!) cuisines has changed our perception of a wide range of ingredients from exotic to deliciously familiar. And, blessed with a climate that allows us to grow all the different all the different vegetables common to the many cultures that now call Australia home, it would be a shame if we didn't bother to try them all.
